CORN MUFFINS 
Preheat oven to 425 degrees. Put a small amount of oil in each of 12 metal muffin cups and preheat for 5 minutes in hot oven. Do not use spray coatings such as Pam (it will burn).

MUFFIN MIX:

1 3/4 c. White Lily self-rising buttermilk cornmeal
1/3 to 1/2 c. white flour
1/4 c. liquid oil
1 egg
1/4 c. granulated sugar
1 1/4 c. milk

Mix all ingredients together well and spoon into preheated pans. Bake at 425 degrees for 17 minutes. Remove from pan immediately. Makes 12 muffins.
