CRISPY CHICKEN BITES 
1 lb. skinless, boneless chicken breasts
1/4 c. all-purpose flour
1 tsp. dried parsley flakes
1/2 tsp. poultry seasoning
1/8 tsp. salt
Dash pepper
1 beaten egg
2 tbsp. milk
30 round crackers, crushed

Rinse chicken. Pat dry. Cut into 1 inch pieces. In a plastic bag, combine flour, dried parsley, poultry seasoning, salt and pepper. Add chicken pieces and shake. Set aside. In a small bowl, combine beaten egg and milk. In another bowl or plastic bag, place crushed crackers. Dip chicken in egg mixture. Roll in crackers. Place on ungreased cookie sheet. Bake at 400 degrees for 10-12 minutes. Serve with dipping sauce.
