APPLE MUFFINS 
1/4 c. unsalted butter
3/4 c. brown sugar
1/2 tsp. vanilla
1 egg, beaten
1 generous c. all-purpose flour
1/2 tsp. baking soda
1 tsp. baking powder
1/8 tsp. salt (or omit)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 c. coarsely chopped Granny Smith apples (1 med. apple)
1 tbsp. half and half (or cream)
1 tbsp. apple cider
1 c. coarsely chopped walnuts
(Optional, 1 c. grated Cheddar cheese)

Cream butter and sugar. Add vanilla and beaten egg.

Stir together dry ingredients and add, stirring just to moisten. Add apples, half and half and cider, stirring gently. Add nuts (and optionally the cheese). Fill greased muffin cups and bake 350 degrees for 25 minutes.
