UPSIDE - DOWN CORN BREAD SUPPER | |
2 med. zucchini 1/2 lb. bulk Italian sausage 8 oz. pkg. corn muffin mix 1/4 c. chopped onion 2 oz. shredded Cheddar cheese 1. Coarsely shred enough zucchini to make 1/3 cup. Set aside. Cut remaining zucchini into 1/4 inch slices. 2. Brown sausage. Remove from skillet and to reserved drippings, add sliced zucchini and onion, stirring to coat. Cover and cook 5 minutes or until zucchini is slightly softened, stirring twice. 3. In a greased baking dish, starting in center, arrange zucchini slices in concentric circles. 4. Prepare corn muffin mix according to directions, stir in shredded zucchini, sausage and cheese. Spread evenly over zucchini slices. Bake in 350 degree oven for 25-30 minutes or until top is golden. Using a spatula, loosen sides of corn bread from dish, invert onto serving platter. Cut into wedges to serve. |
