BROCCOLI CASSEROLE 
1 med. onion, chopped
1/2 stick butter
1 can cream of chicken soup
1 (8 oz.) pkg. Velveeta cheese
1 sm. can evaporated milk
1 c. Minute Rice, uncooked
2 pkg. chopped broccoli, thawed
Bread crumbs

Saute onions in butter; add cheese, soup, and milk. Stir until cheese melts and mixture is smooth. Add remaining ingredients, except bread crumbs. Pour into greased 8 x 10 inch casserole. Bake at 350 degrees for 30-40 minutes.
