CHIMICHANGAS 
1 lb. beef (ground beef or left over roast)
1 onion
1 sm. can diced green chilies
1 can whole tomatoes
Cornstarch
Flour tortillas

Dice beef small, slightly brown meat. Add remaining ingredients except cornstarch and tortillas. Simmer until beef is done, thicken with cornstarch. Spoon mixture in middle of flour tortillas, fold over all sides and use toothpicks to hold together. Deep fry until brown or place in 400 degree oven until brown.
