PAPS RELLENOAS - PERU 
2 lb. potatoes
2 eggs
1 lb. ground beef
1 clove garlic, pressed
Salt & pepper
2 tbsp. grated onion
2 tbsp. raisins (also good without, but not authentic)
8 black olives, chopped
1/2 c. flour
2 hard boiled eggs

Boil, peel and mash the potatoes, season to taste. Beat in the 2 eggs. In a little hot fat brown the meat, garlic, onion; add raisins and olives. Salt and pepper to taste. Take a portion of mashed potatoes and make a flat "pancake". Fill with 1 heaping tablespoon of meat mixture and a slice of hard boiled egg. Form into elongated ball. Roll in flour and fry in hot fat until evenly browned.
