SEAFOOD GUMBO 
2 tbsp. vegetable oil
5 1/2 c. water
1 can (16 oz.) whole tomatoes (broken up, undrained)
1 lb. fresh shrimp, shelled, deveined or 1 lb. frozen shrimp (thawed)
1 med. red or green pepper (diced)
1 pkg. (8 oz.) Gumbo Dinner Mix
1 tsp. Tabasco
1 pkg. 910 oz.) frozen whole okra (thawed)

In 4 or 5 quart pot with tight fitting lid, heat oil, saute pepper 2 minutes. Gradually add water and bring to a boil. Stir in dinner mix, tomatoes and red pepper sauce. Cover and simmer 20 minutes, stirring occasionally. Add okra and shrimp; simmer 5 minutes longer or until shrimp are just done. Serves 4.

One pound of any combination of fresh or frozen, thawed, seafood may be substituted for shrimp.
