CHUCK WAGON STEW 
2 lb. lean beef, cut in 1" cubes
1/4 c. all-purpose flour
1 tsp. sugar
3-4 stalks celery
2 tbsp. shortening
2 tsp. salt
1/4 tsp. pepper
Dash of thyme
1 can green peas
1 bay leaf
1 can beef gravy
6 potatoes
6 carrots, quartered
6 onions, quartered

Combine sugar and flour. Coat beef with mixture and brown in hot shortening. Add seasonings and gravy to meat. Cover and simmer over low heat about 1 hour. Stir in vegetables. Cover and cook on low heat all day. Great with homemade biscuits.
