SWEET POTATO CASSEROLE 
2 c. cooked sweet potatoes
1/2 tsp. cinnamon
1/4 tsp. nutmeg
Pinch of salt
1 c. sugar
3 eggs, unbeaten
1 c. cream
3 tbsp. melted butter
1/2 tsp. vanilla extract

Mix spices and salt with sugar, stir into sweet potatoes until thoroughly mixed. Add eggs one at a time and slowly add cream to the mixture. (Use mixer throughout and beat well.) Last, add the melted butter and vanilla. Pour into a greased casserole. Bake at 350 degrees about 1 hour. Test with a knife.
