STRAWBERRY MUFFINS 
1/2 c. butter
1 1/4 c. plus 2 tsp. sugar
2 eggs
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
2 c. strawberries

Mix 1/4 cup of the flour and 2 teaspoons of the sugar into strawberries. Cream together sugar and butter. Add eggs one at a time, beating after each addition.

Combine the flour, baking powder, and salt, mixing thoroughly. Add dry ingredients alternately with milk. Gently mix strawberries with 1/4 cup flour. Fold into batter.

Fill greased muffin pan 2/3 full. Sprinkle sugar on top.

Bake at 375°F for 25-30 minutes.

VARIATION TOPPING:

1/4 c. melted butter
2 tsp. lemon juice
1/4 c. sugar

Dip tops of muffins into mixture of lemon juice and butter; then dip into sugar, when muffins have cooled slightly.
