SOUTHERN EGGS 
18 eggs
1 c. half and half
3 tbsp. butter
1 can cream of mushroom soup
1 to 2 c. finely diced ham
1 1/4 c. shredded cheese

Beat eggs, half and half, scramble in butter in large skillet. Place in 9x13 pan. Pour on soup, layer the ham, top with shredded cheese.

Bake at 250 degrees for 45-60 minutes. Can be held additional 30-45 minutes without getting tough. To prepare ahead of time, cover and refrigerate, then bake 75 minutes uncovered at 250 degrees.
