SCOTCH EGGS 
Great holiday appetizer. Usually the hit of the party!

1 pkg. Jimmy Dean sausage meat (regular)
3 hard-boiled eggs
1 tsp. oregano
bread crumbs
1 beaten egg

Mix sausage meat, oregano and egg together, add 1/4 cup bread crumbs. Mix well with hands, divide into three balls. Using hands, wrap sausage meat around boiled egg and roll in bread crumbs. Place on baking sheet and bake at 350°F for 30 minutes (can be refrigerated up to 7 days). Cool and cut into quarters, arrange on a lettuce-lined serving tray.
