SCALLOPED CABBAGE SUPREME 
6 c. cabbage, chopped
1/4 c. butter, melted
2 tbsp. flour
3/4 tsp. salt
Pepper to taste
3/4 c. milk
3/4 c. grated American cheese
1 1/3 c. soft bread crumbs

Parboil cabbage in 1-quart boiling water in saucepan for 5 minutes, drain. Place in 9 inch square pan. Blend 3 tablespoons of butter with flour in saucepan. Stir in salt, pepper and milk. Simmer for 5 minutes, stirring constantly; remove from heat. Stir in cheese until melted. Pour over cabbage. Sprinkle with mixture of bread crumbs and remaining 1 tablespoon butter. Bake at 375 degrees for 20 minutes. Yields 6 servings.
