MUNCHIE POPCORN | |
6 c. popped popcorn 1 c. dry roasted peanuts 1/3 c. shredded coconut 2 tbsp. butter 1/4 c. honey 3/4 c. dried apricots 3/4 c. raisins Put popcorn, peanuts and coconut in 13 x 9 x 2 inch baking pan. Do not stir yet. Melt butter, take off burner, stir in honey. Drizzle butter-honey mixture in baking pan. Gently stir mixture with rubber scraper until mixed well. Put pan in oven. Then turn oven to 300 degrees. Bake 20 minutes. Stir once or twice while baking. While mixture is baking, use kitchen scissors to snip the dried apricots into small pieces. (If your scissors starts sticking, dip into cold water.) Cool mixture slightly. Loosen mixture with spatula. Stir apricots and raisins. Makes 7 cups. |
