APPLE STRUDEL 
2 c. flour
1/2 c. lukewarm water
1 tbsp. shortening or lard
1 egg
Pinch of salt
1/4 c. butter, melted
6 lb. apples, peeled & sliced
2 c. white bread crumbs
2/3 c. raisins
2/3 c. chopped nuts
1 c. sugar
Grated lemon rind
Cinnamon

Put flour, water, shortening, egg and salt in bowl. Mix to make a soft dough. Beat with hand until dough blisters. Cover with warm bowl. Set in warm place for half an hour while apples are being peeled. Prepare clean pastry cloth powdered with flour.

Divide the dough into 2 parts. Roll each carefully with rolling pin. Brush dough with melted butter. Pull with hands until it is tissue thin.

Filling: Peel and slice apples, as for pie. Brown bread crumbs. Add raisins, nuts, sugar and lemon rind. Divide filling in half. Place filling on 2/3 of the dough. Sprinkle with cinnamon. Roll with tablecloth around it and place on cookie sheet to bake. Making it in two parts makes it easier to handle. Bake at 350 degrees for about 45 minutes.
