4 c. cubed apples
1 c. oil
2 c. sugar
2 tsp. vanilla
2 tsp. cinnamon
1/2 tsp. salt
3 c. flour
2 tsp. baking soda
2 eggs, beaten
1 c. nuts (optional)

Mix apples, oil, sugar, vanilla, cinnamon, and salt and allow to marinate in bowl for at least 1 hour. Add 3 cups flour, baking soda, eggs, and nuts. Mix batter by HAND (do NOT use mixer). Bake in greased 10 inch tube pan at 350 degrees for 1 hour and 15 minutes.
