APPLE BREAD 
3 eggs, slightly beaten
2 c. sugar
1 c. vegetable oil
1 tbsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
4 c. chopped, pared, cored apples (3-4)
1 c. chopped pecans (optional)

TOPPING:

2 tbsp. sugar
1/2 tsp. cinnamon

Grease and flour two 8 1/2 x 5 1/2 x 2 1/2 inch loaf pans. Stir together eggs, sugar, oil and vanilla. Combine flour, baking soda and cinnamon. Stir into liquid ingredients until well mixed. Stir in apples and pecans. Divide between 2 loaf pans.

Prepare topping in small cup. Sprinkle over tops of loaves. Bake in preheated 325 degree oven for 1 hour and 10 minutes. Let cool for 10 minutes before removing from pans. Store at room temperature.
