CRANBERRY PUMPKIN BREAD | |
2 eggs, slightly beaten 2 c. sugar 1/2 c. oil 1 c. pumpkin filling 2 1/4 c. flour 1 tbsp. pumpkin pie spice 1 tsp. salt 1 c. cranberries, chopped 1 tsp. baking soda Combine eggs, sugar, oil and pumpkin; mix well. Combine flour, pie spice, soda and salt in a large bowl. Make a well in the center. Stir just until dry ingredients are moistened. Stir in cranberries. Spoon batter into 2 greased and floured 8 x 3 3/4 x 2 1/2 inch aluminum foil pans. Bake at 350 degrees for one hour or until toothpick inserted in middle comes out clean. |
