BROILED CHILI BEEF RIBS 
1 lg. garlic clove
1 tsp. salt
1/2 stick unsalted butter
1 tbsp. Worcestershire sauce
2 tsp. chili powder
2 tsp. ground cumin
12 meaty beef rib bones cut from a rib roast, separated

Mince the garlic and mash it with the salt to form a paste. In a small saucepan cook the garlic paste in the butter over moderately low heat until it is softened. Stir in the Worcestershire sauce, the chili powder and the cumin and remove the pan from the heat.

Brush the ribs with some of the sauce and broil them on the rack of a broiler pan under a preheated broiler about 4 inches from the heat brushing them with the sauce for 5 minutes on each side for medium rare. Serves 4.
