BROILED FLOUNDER 
4 (3 oz.) flounder fillets
1 tbsp. lemon juice
1/4 c. grated Parmesan cheese
1/8 tsp. salt
2 tbsp. butter, softened
1 1/2 tbsp. mayonnaise
1 1/2 tbsp. chopped green onion tops
Dash of hot sauce

Brush fillets with lemon juice. Combine cheese and next 5 ingredients. Set aside.

Place fillets on lightly greased rack of broiler pan; broil 4 inches from heat (6-8 minutes). Spread cheese mixture evenly over fish; broil until fish flakes.
