SPINACH - CHEESE PIE 
2 pkgs. frozen spinach
3 eggs
2 pkgs. Muenster cheese, sliced
1 pt. Ricotta cheese
1 sm. Mozzarella cheese

Cook spinach and drain thoroughly. Beat eggs. Grate Mozzarella and mix all the above with Ricotta. Salt and pepper to taste. Line a pie plate with Muenster cheese as the crust. Pour in filling. Cover with a top crust of Muenster cheese slices. Bake at 350 degrees for 35-40 minutes.
