1 c. vegetable shortening 1 c. firmly packed light brown sugar 1 c. granulated sugar 2 eggs, beaten until frothy 2 c. sifted all purpose flour 1 tsp. baking soda 1 tsp. baking powder 1/4 tsp. salt 1 c. flaked coconut 1/2 c. chopped nuts 3 c. quick cooking rolled oats 1 tsp. vanilla Cream shortening and sugars until fluffy, beat in eggs. Sift flour with baking soda, baking powder and salt, stir into creamed mixture, blend in vanilla. Mix in coconut, nuts and oatmeal until uniformly blended. Roll into 1 1/4" balls and space 2" apart on lightly greased baking sheets. Using your fingers, flatten balls into patties about 1/8" thick, evening up ragged edges. Bake in 375 degree oven 8 to 10 minutes or until pale brown. Remove to wire racks while warm. |
