LIVER SAUSAGE 
1 beef tongue
1 beef heart
9 lb. pork roast (pork butt roasts are good)

Cover with water and boil until meat falls off bones.

3 lbs. liver

Cover and boil, cook so no blood comes out. (Save pork broth to moisten meat mixture).

3 chopped onions, fry in fat from pork broth
1 1/2 c. rice, boil in water until done

Run all above through grinder. Add seasoning:

2 tbsp. salt or so
4 tbsp. sage
2 tsp. pepper
