OATMEAL SHORTBREAD 
3 1/2 c. oatmeal
1/4 c. whole wheat flour
1/2 c. honey
1/3 c. oil
1/2 tsp. salt
1 tsp. pure vanilla extract

Mix all ingredients to make stiff dough. Oil and flour a 9 x 13 inch pan and press dough firmly into pan. Bake at 325 degrees until light brown, about 30 minutes. Cool for 10 minutes. Cut into squares.
