G.'S SHRIMP JAMBALAYA | |
2 lbs. raw shrimp 1 lb. (2 c.) rice 3 lg. onions 2 sticks celery 1 tbsp. flour 3 tbsp. lard 1/2 c. parsley 1/2 c. onion tops, chopped fine 1 sm. can tomato sauce Salt & pepper to taste 1 tsp. sugar 4 c. water (approximately) Brown flour in lard, add onions to make roux, put shrimp and seasonings in, simmer. Add tomato sauce, stir. Add water and come to boil. Add washed rice, stir all together. Put cover on. Cook on low fire until rice is done, one hour, stirring occasionally until rice is done. Sugar is added with tomato sauce to reduce acid taste to tomatoes. Yield: 10 or more servings. |
