GLAZED FRESH - APPLE COOKIES
2 c. all-purpose flour
1 tsp. baking soda
1/2 c. butter
1 1/3 c. brown sugar, packed
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. ground cloves
1/2 tsp. nutmeg
1 egg
1 c. chopped nuts, optional
1 c. finely chopped, unpared apple
1 c. raisins, chopped (if desired, substitute more apples)
1/4 c. apple juice or milk
Vanilla Glaze (recipe following)

Preheat oven to 400 degrees. Sift flour with baking soda. Mix butter, brown sugar, salt, cinnamon, nutmeg, and egg until well blended. Stir in half of the flour mixture, then nuts, apples, and raisins. Blend in apple juice, then the remaining flour mixture.

Onto lightly greased cookie sheets drop rounded tablespoonfuls of dough 2-inches apart. Bake 11-14 minutes or until done. While cookies are still hot, spread thinly with vanilla glaze. Makes 3 1/2 dozen. For smaller cookies, crop by teaspoonfuls; adjust cooking time accordingly.

VANILLA GLAZE:

1 1/2 c. sifted confectioners sugar
1 tbsp. soft butter
1/4 tsp. vanilla extract
1/8 tsp. salt, optional
2 1/2 tbsp. milk

In a small bowl blend all of the ingredients until smooth. Use to spoon over hot glazed fresh-apple cookies.
