ENCHILADA CASSEROLE 
2 lb. ground beef
1 sm. onion
2 to 3 cans enchilada sauce
1 can cream of mushroom soup
1 lb. pkg. Velveeta cheese
1 pkg. corn tortillas
1 pkg. Longhorn cheese

Brown ground beef with chopped onion. Drain. Mix all ingredients in large casserole dish (tortillas should be torn into small pieces), except Longhorn cheese. Grate Longhorn cheese and cover casserole mixture. Cover. Heat at 350 degrees until hot and bubbly.
