RICH & LEAN BEEF STROGANOFF 
1-1 1/2 lb. lean beef cubes
2 tbsp. flour
2 tbsp. safflower oil
Salt & pepper
1 can beef consomme
3 tbsp. ketchup
3 tbsp. Worcestershire sauce
2 tbsp. mustard
1-2 (4 oz.) cans mushrooms
Cooked rice

Dredge beef cubes in flour, salt and pepper. Brown in saucepan in oil. Add consomme, ketchup, Worcestershire and mustard. Simmer 1-1 1/2 hours on low heat, covered. Add drained mushrooms. Serve over rice.

This recipe originally called for 1 cup sour cream. It is totally unnecessary, but you may add a little if you wish.
