STUFFED FLANK STEAK | |
1 (1 lb.) flank steak Salt, pepper and garlic powder to taste 10 oz. pkg. frozen chopped spinach 1/2 c. Parmesan cheese 2 c. tomato sauce 1/2 tsp. dried oregano 1/2 tsp. dried basil 1 tsp. dried parsley 1 tsp. salt 1/4 tsp. pepper 1 clove pressed garlic 1 med. chopped onion Score steak on both sides. Sprinkle with salt, pepper and garlic powder to taste. Combine thawed spinach, Parmesan cheese. Add salt, pepper and garlic powder to taste. Spread spinach down the center, lengthwise and roll up steak like a jelly roll. Tie steak with string to secure. Brown steak in oil on all sides. Add remaining ingredients and simmer for 1-1 1/2 hours, turning occasionally. Slice roll and serve with sauce. |
