1 c. heavy cream
4 tbsp. brown sugar
1 tbsp. grated orange rind
2 tbsp. rum
Pulp of orange, minced

Combine cream, sugar and orange rind in mixing bowl. Refrigerate for a few hours. Beat cream until thick and add rum. Blend in orange pulp.
