CHICKEN CACCIATORE | |
4 slices bacon, cut in sm. pieces 1/3 c. chopped onions 1 clove garlic, minced 1/2 c. (4 oz. can) sliced mushrooms 4 c. spaghetti sauce 1 tsp. salt 1 tsp. oregano 1/4 tsp. pepper 1 (2 1/2-3 lb.) chicken, cut up 1/2 c. vegetable oil 1 lb. thin spaghetti Saute bacon in large saucepan until browned. Add onions, garlic and mushrooms; cook until onions are tender. Stir in spaghetti sauce, salt, oregano and pepper; simmer about 10 minutes. Saute chicken in oil in large skillet until browned on all sides. Add chicken to sauce; cover and simmer 45 minutes or until chicken is tender. Cook spaghetti according to package directions; drain. Arrange chicken over spaghetti in large serving dish. Serves 6. |
