CARROT PIE 
6 med. carrots, cooked, pureed
2 eggs, beaten
2 c. milk
1 c. packed brown sugar
1 unbaked 9 inch pie shell
1/2 tsp. salt
1/2 tsp. each ginger, allspice
2 tbsp. cinnamon

Combine carrots, eggs, milk, brown sugar and seasonings in mixer bowl. Beat 2 minutes. Pour into pie shell. Bake at 400 degrees for 15 minutes. Reduce temperature to 250 degrees. Bake for 45 minutes longer.
