NO-BAKE CLUB DESSERT 
CRUST:

2 cups graham cracker crumbs
4 tbsp. (1/2 stick) butter, melted

Mix cracker crumbs with melted butter. Pat into 9x13-inch pan. Chill in refrigerator for 15 minutes.

FILLING:

2 cups confectioners' sugar
1 cup (2 sticks) butter, softened
1 tsp. vanilla
2 eggs (or equivalent such as Egg Beaters)

Mix confectioners' sugar, softened butter, vanilla and eggs (or pasteurized equivalent) and beat until fluffy. Spread over crust.

FRUIT LAYER:

4 bananas, sliced
1 (15 oz.) can crushed pineapple, drained

Slice bananas over batter. Spread with drained pineapple.

TOPPING:

2 cups sliced strawberries
1 (8 oz.) tub Cool Whip
chopped nuts, for sprinkling

Top with sliced strawberries, Cool Whip and chopped nuts.

This recipe looks delicious. My only concern is with the eggs in the filling... they are not cooked in any way.

If you are concerned about uncooked egg, use a pasteurized egg from the supermarket like "Egg Beaters" - they come in a carton.
