STUFFED ZUCCHINI 
2 tbsp. olive oil
1 lg. onion
3 cloves garlic, chopped
6 med. zucchini, halved with pulp removed, chopped & reserved
14 oz. crushed tomatoes
1 lb. sausage
1 lb. ground beef or ground turkey
1 c. season bread crumbs
1 egg
Salt & pepper to taste
Grated Parmesan cheese & parsley for garnish

In a medium-size skillet, heat the olive oil over medium heat. Add the onion and garlic and saute until onion is translucent. Add zucchini pulp and tomatoes and simmer 15 minutes.

Preheat oven to 350 degrees. Spray a 13 x 9 x 2 inch baking dish with non-stick spray. Add beef (or turkey) sausage, bread crumbs, egg and seasonings to the onion and garlic mixture and mix well. Spoon into zucchini shells and bake 1 hour or until shells are tender. Garnish with bread crumbs, cheese and parsley. Serves 8.
