SPICY SPUD CHICKEN | |
1/3 c. butter, melted 2/3 c. instant mashed potato flakes 3 tbsp. dry taco seasoning mix 1/8 tsp. ground red pepper 1/3 c. grated parmesan cheese one 2 1/2 - 3 lb. chicken, cut into eight pieces Preheat the oven to 375°F. Coat a 9 X 13 baking dish with nonstick cooking spray. Place the melted butter in a shallow dish. In a large bowl, combine the remaining ingredients except chicken. Dip chicken pieces into butter, them potato mixture, coating well. Place the chicken in baking dish and bake for 45 to 60 minutes. |
