DOUGHNUT MUFFINS | |
1/3 c. soft shortening 1 c. sugar 1 egg 1 1/2 c. sifted all-purpose flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. nutmeg 1/2 c. milk Cream shortening and sugar. Add egg. Beat well. Mix and sift flour, baking powder, salt and nutmeg. Add dry mixture alternately with milk to egg mixture. Fill greased muffin pans 2/3 full. Bake in moderate oven, 350 degrees for 20 to 30 minutes or until golden brown. Remove from pans at once and roll in melted butter then in mixture of 1/2 cup sugar and 1 teaspoon cinnamon. Makes 12 medium-sized muffins. We also bake in paper cups inside a muffin tin and just butter the top of each and sprinkle with the sugar and cinnamon mixture. We also use the muffin recipe and add 1 cup or more of wild huckleberries. Makes 16 to 18 muffins. |
