STRAWBERRY PIE 
PIE CRUST:

1/3 c. shortening
2 tbsp. butter
1 c. flour
1/2 tsp. salt
3 tbsp. cold water with 3 to 4 drops yellow food coloring in water

FILLING:

1 1/2 qts. fresh strawberries
3 tbsp. cornstarch
3/4 to 1 c. sugar
1 c. water
1 tsp. butter

FOR CRUST: Cut shortening, butter, salt and flour together. Add water. Stir to form ball. Roll on flat surface. Makes 9 inch pie shell. Stab crust with fork before baking. Bake crust 4 to 6 minutes at full power, turning every 2 minutes.

FOR FILLING: Clean and hull berries and mash into bowl. Add 1 cup water and sugar. Microwave 5 to 6 minutes at full power or until boiling. Soften cornstarch with little water. Add to boiling mixture. Microwave 2 to 3 minutes at full power or until mixture thickens, stirring once. Stir in butter and cool. Fill baked pie shell with berries and mixture. Put Cool Whip and berries on top.

Since microwave ovens vary in power, you may need to adjust your cooking time.
