EMMA'S RHUBARB CAKE 
1 1/2 c. firmly packed brown sugar
1/2 c. butter, softened
1 egg
2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1 c. milk
1 tsp. vanilla extract
2 1/2 c. diced rhubarb
1/2 c. sugar
2 tsp. cinnamon

Cream brown sugar and butter. Add egg; beat well. Add next 4 ingredients. Beat until smooth. Fold in vanilla and rhubarb. Pour into greased and floured 9"x13" baking pan. Combine sugar and cinnamon. Sprinkle over batter. Bake at 350 degrees for 40 minutes.
