MINESTRONE SOUP | |
1 pkg. bean mix 3 qts. water 1 pkg. herb mix 1 carrot, chopped 2/3 c. (4 oz.) chopped cooked ham 1 (14 1/2 oz.) can no salt added stewed tomatoes, undrained 1 pkg. macaroni Sort and wash bean mix. Place in Dutch oven. Cover with water 2" above beans, soak 8 hours or overnight. Drain beans and add 3 quarts water, herb mix, carrot, ham. Bring to a boil, reduce heat and simmer 2 hours, stirring occasionally. Add tomatoes and macaroni, cook 20 minutes or until macaroni is tender. Yield: 8 servings, 167 calories per 1 cup serving. |
