APRICOT COOLER 
1 (30 oz.) can whole peeled apricots, drained reserving syrup
1 c. crushed ice
3/4 c. Kraft mini marshmallows
1 c. milk
2 tbsp. lemon juice
Fresh mint sprigs, optional

Remove pits and place apricots in blender container. Add crushed ice and marshmallows. Blend at a low speed 1 minute. Gradually add milk, 1/2 cup reserved apricot syrup, and lemon juice. Blend until creamy. Serve in wine glasses and garnish as desired. Note: May add a liquor, such as brandy, if desired.

Makes 6-8 servings.
