GUILT-FREE CHEESECAKE 
3 env. Knox gelatin
1/2 c. water
5 tbsp. sucaryl (5 tbsp. water and 4 tsp. sweetener)
1 tsp. vanilla
1 qt. buttermilk

Dissolve gelatin in water over low heat. Add sweetener, vanilla, and buttermilk. Let set in refrigerator until firm. Put 1 serving crushed pineapple on 1/4 of the pie.
