RICE PUDDING 
1 c. rice, parboiled, not instant
2 c. milk
1/4 c. sugar
1 vanilla bean, split lengthwise
1/2 c. raisins
2 c. heavy cream
2 egg yolks

1. Combine rice, milk, sugar and vanilla bean in a 2 quart dish. Cook, uncovered at 100% for 10 minutes. Add raisins, stir and cook for 10 more minutes or until milk is mostly absorbed.

2. Remove from microwave. Whisk together cream and egg yolks; stir into rice.

3. Cook, uncovered, for 1 minute. Stir, and cook for 1 minute longer.

4. Remove from microwave and stir. Let sit for 10 minutes before serving. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
