CHICKEN TARRAGON 
6 to 8 chicken thighs or 4 to 6 breasts
2 tbsp. butter
1 tsp. tarragon
1/2 c. dry white wine
1/4 c. water
Chopped shallots or onions
Salt and pepper
Fresh mushrooms, 8 oz. optional

Skin chicken. Cook 10 minutes until golden brown on one side. Turn over for 5 minutes. Add shallots, cook briefly. Add tarragon, wine, water, mushrooms, salt and pepper. Cover and simmer for 15 minutes.
