ITALIAN GARDEN SOUP 
1 tbsp. butter
1 lg. onion, chopped
1 sm. clove garlic
1 1/2 c. thinly sliced carrots
1 1/2 c. thinly sliced celery
1 1/2 - 2 c. sliced zucchini
1 (28 oz.) can chicken broth
1 (16 oz.) can tomatoes
1 tsp. oregano
1/2 tsp. basil
1/8 tsp. ground pepper

Melt butter in saucepan. Add onion and garlic. Saute 4 minutes. Add rest of ingredients and bring to a boil, then simmer 20 to 30 minutes.
