BAKED MANICOTTI 
1 (8 oz.) box manicotti
2 c. (15 oz.) container Ricotta cheese
2 c. (8 oz.) shredded Mozzarella cheese
1/4 c. grated Parmesan cheese
1/2 lb. hot sausage (loose or take out of casing), cooked and drained
1/4 lb. ground beef, cooked and drained
2 tbsp. chopped parsley
1/2 tsp. salt
1/4 tsp. pepper
3 1/2 c. (32 oz. jar) spaghetti sauce

Cook manicotti as directed on package. Cool in a single layer on wax paper, to prevent manicotti from sticking together. Combine cheese, meats, parsley, salt and pepper for filling; spoon into manicotti.

Spread a thin layer of spaghetti sauce on bottom of 9 x 13 inch pan. Arrange manicotti in single layer over sauce and cover with remaining sauce. Cover with aluminum foil and bake at 350 degrees for 40 minutes. Remove foil and bake 15 minutes longer. 6 to 8 servings.
