BAKED SCALLOPED CORN | |
1 sm. onion 1/2 green pepper 1/2 c. butter 1 can cream corn 1 can whole corn, drained 1 (8 oz.) box Jiffy corn muffin mix 3 eggs 1 c. sour cream 1 c. grated Cheddar cheese Saute onion, butter, and green pepper. Mix corn muffin mix and eggs very well. Add sauteed mixture in 2 quart casserole dish. Mix sour cream and cheese together and spoon over corn mixture. Bake in oven for 45 to 50 minutes at 350 degrees. |
