BUTTERSCOTCH YUMMIES 
4 oz. regular butterscotch pudding
2 c. dry Bisquick mix
1 c. coconut
3/4 c. sugar
1 egg
1/3 c. milk
1/4 c. melted butter
1 tsp. vanilla
1/2 c. walnuts

Combine dry pudding mix, Bisquick mix and sugar. Add egg, milk, butter and vanilla. Stir in coconut and nuts. Shape into balls and roll in powdered sugar. Place on cookie sheet and bake for 11 minutes at 350 degrees. Cookie will be soft. May also substitute chocolate pudding for the butterscotch pudding. Makes approximately 2 1/2 dozen cookies.
