CREAMY RICE PUDDING 
4 c. milk
1/2 tsp. salt
1/2 c. rice
1 tsp. vanilla
2/3 c. sugar
1 tbsp. butter
2 eggs
1/2 tsp. cinnamon & nutmeg

While water heats in bottom of a double boiler, heat milk and salt in top of double boiler. Stir in rice into milk, cover and simmer 1 hour, stirring occasionally to keep from lumping. After an hour add butter and sugar. Cook 10 more minutes. Remove from heat.

In a separate bowl mix a little pudding into the well beaten eggs. Add vanilla and pour back into pudding. Sprinkle with nutmeg or cinnamon and serve.
