CRANBERRY OAT MUFFINS 
1/2 c. raw cranberries
1/4 c. honey or maple syrup
2 tbsp. vegetable oil
3/4 c. soy milk or skim milk
1 c. oat bran
1 c. whole wheat pastry flour
1 tsp. baking powder
1 tsp. dried orange peel

Place cranberries, honey, oil, milk or soy milk in blender and blend slightly. Stir in remaining dry ingredients and mix well. Fill muffin cups and bake at 400 degrees F. for 25-30 minutes until nicely browned.
